Delhi Duo Turns Passion into Profit with Thriving Food Truck Business

Delhi Duo Turns Passion into Profit with Thriving Food Truck

On a scorching afternoon in Delhi in 2012, Jyoti Ganapathi and her husband Satya Koniki were busily preparing dosa batter for their food truck, Dosa Inc, after receiving a call from a prospective customer.

While blending the peanut butter chutney in their truck, Jyoti reminisced about her past. As a child, she had been enchanted by a massive truck in the 1980s, and at 17, she dreamed of establishing her own dosa stand. Eventually, she and Satya got married and aimed to launch a South Indian restaurant together.

As she quickly smashed peanuts, she recalled enthusiastically sharing her business aspirations with colleagues on her final day at her job. Upon arriving at the Alaknanda neighborhood, the 41-year-old felt a surge of excitement as her dream of owning a food venture was materializing.

Within three hours, they sold every last medhu vada, utilizing an impressive 30 kilos of dosa batter. “Instead of waiting for customers, we bring our food to them—this is the unique selling proposition of Dosa Inc, which has served authentic South Indian cuisine to nearly 50,000 customers in Delhi, Gurugram, and Noida,” Jyoti proudly explained to The Better India.

Establishing Dosa Inc

Jyoti graduated from Knox College in the U.S. and later earned a Master’s in human resource management before joining her father’s logistics company. Satya, equipped with a Master’s in Telecom, boasted a decade of experience in startups in Silicon Valley and India. The couple decided to leverage their professional experiences and passion for South Indian cuisine to create Dosa Inc in 2012.

“Starting our food venture was a lifelong dream. We initially considered opening a restaurant but faced various challenges like high investment costs and location selection. Food trucks were well-known abroad but relatively new here, and we envisioned more flexibility,” Satya shared.

The Construction Journey

The couple invested Rs 10,00,000 to acquire the truck and vital kitchen equipment. However, operating a food truck encompasses more than just great food; vehicle maintenance is equally crucial. They began with a tempo traveler but soon switched to a CNG-operated TATA Ace for its mobility and environmental benefits.

Next, they set up a base kitchen to prepare essential dishes like sambar and chutney. Jyoti elaborated, “A regular truck is converted into a food truck, and its size and equipment depend on the cuisine. The base kitchen is essential for heavy cooking and cleaning, ideally situated in a commercial area.” Securing the necessary permits, licenses, and understanding local regulations are also vital to their operation.

Marketing Techniques

Launched in 2012, Dosa Inc predates the popular food delivery apps, making direct marketing essential. They distributed flyers detailing their menu and visited neighborhoods to build a customer base through word of mouth. Once established, they collaborated with local influencers to share menus and updates online.

Jyoti emphasized creating personal connections with customers and making small adjustments to meet their preferences, which led to 800 loyal families within six months. Currently, they maintain friendly relations with hundreds of families across 200 neighborhoods. Pooja Manshani, a regular customer, praised their consistency and hygiene measures during the pandemic.

Expanding Horizons

Over the years, Jyoti and Satya have diversified their services, catering to events and launching new snacks like Muruku and Laddoo, generating revenue even during lockdowns. They’ve switched to eco-friendly materials and packaging, serving food in biodegradable containers.

Their growth rate of 35% has not come without challenges. Jyoti noted the complexities of dealing with permits and municipal regulations. Additionally, while training staff can be labor-intensive, Dosa Inc now assists with housing as a retention strategy. Despite challenges like weather conditions and traffic, the couple continues to adapt and improve customer relations.

While Dosa Inc may lack the traditional dining ambiance, Jyoti and Satya are committed to providing excellent service and expanding their reach.
