Harpreet Singh’s Culinary Journey in Fresno
Upon relocating to Fresno in 2008, Harpreet Singh observed that the city offered few restaurants serving the “authentic flavors” he fondly remembered from India.
Launching Chatore
Seventeen years later, he established his own restaurant, Chatore, which features popular Indian Punjabi cuisine, including butter chicken and beloved street snacks like samosas. The name “Chatore,” which translates to “foodie” in Punjabi, reflects the owner and his family’s passion for the rich flavors of their homeland.
Authentic Flavors
“Indian food is rich in spice and aroma, yet many local establishments lean toward sweeter tastes,” noted Singh. “I envisioned a restaurant that genuinely represents Indian cuisine, bursting with spices, flavors, and affection.”
A Diverse Menu
Opened in April at 6701 N. Milburn Avenue in the Herndon Place shopping center, Chatore offers an array of dishes, from pani puri—crisp shells filled with tangy water, potatoes, and chickpeas—to samosas served with chickpea curry and chutneys. Customers can customize their spice levels: mild, medium, or hot.
Secret Recipes and Preparation
Singh’s culinary pursuits did not stem from a formal food background; he spent much of his career in trucking after previously owning a gas station. Nevertheless, his culinary experimentation has led to unique creations like creamy chicken, featuring a nutty white gravy made from cashews and white pepper, alongside family recipes such as ginger-infused lemon chicken.
Community Connection
With an approximate 50,000 Punjabi immigrants residing in Fresno as of 2024, Singh believes that the demand for authentic Indian cuisine will continue to rise. He hopes that Chatore can expand with the community and plans to explore franchise opportunities to extend their reach.
Future Plans for Expansion
“We aim to open more locations,” Singh expressed, currently working with his legal team to set up franchise agreements to facilitate future growth. His vision aligns with the expanding Punjabi community in Fresno, emphasizing his commitment to bringing authentic Indian flavors to the area.
